Discover the Spirit of Belize: Sustainable, Organic Copalli Rum
In July 2018, Copal Tree Distillery began producing Copalli Rum, supporting sustainable agriculture in Southern Belize. Located next to Copal Tree Lodge and its 3,000-acre organic farm, the distillery creates premium organic spirits in a zero-impact facility using native sugarcane.
Our offerings include Copalli White, Cacao, and Barrel Rested Rums. White Rum is aged in stainless steel for six months, Cacao Rum is infused with roasted cacao nibs, and Barrel Rested Rum is aged in bourbon barrels for six to eight months.
Copalli Rum is available at our on-site Rum Bar, included in the Farm-to-Table All-Inclusive Package, and can also be purchased at our fly and gift shop. Copalli Rum
White Rum
The double distillation of sugarcane juice, blend of pot and column still distillation, and the long resting of the finished product on stainless steel create a smooth white rum that’s as excellent served straight on the rocks as it is showcased in a daiquiri.

Barrel Rested Rum
The double distillation of sugarcane juice, use of exclusively full-bodied pot still distillation, and aging in American Oak used bourbon barrels delivers a rich sweet rum that tastes delicious neat and is a powerful and flavorful base for your favorite rum cocktail.

COPALLI CACAO RUM
Roasted cacao nibs from the neighboring organic farm are added to Copalli White Rum. Over several weeks the nibs infuse a rich chocolate flavor and aroma into the rum which is distilled once more to create a smooth finished product that is unique and delicious.
80 Proof - 40% ALC/VOL.
